Backlog...


I baked pineapple tarts again last evening because there were still some dough and pineapple paste from CNY bakings. I bought more pineapple paste from Fairprice yesterday as it was on sale. I also made more dough and put them in the fridge so that I can bake anytime when I feel like it. I'm glad the pineapple tarts turned out good, except for the sweetness of the paste. I still prefer homemade pineapple paste. :p

I've got some left-over homemade pineapple paste too, and thinking of making the tarts as and when i feel like eating them!

For us in the East, pineapple tarts are actually very popular. They are a must for us during our Chinese New Year. However, many those commercialised ones are not very nice. The homemade ones are so much better. The pineapple paste is not easy to make though as stirring takes about 2hours! Very tedious work involved. Therefore, it's quite expensive too! :p

Hi Jane, like you I have left half a pack of pineapple fillings. I can't wait to find sometime to bake a batch of pineapple tarts. and thanks for the idea of keeping the dough in the fridge, it certainly makes things more convenient :)

Hi HHB,
No worries! Somehow, I like to make more dough and keep them in the freezer or fridge, depending on when I want to use it. If it's within the next 3 days, it'll be the fridge, if next week, then maybe the freezer! So that anytime I feel like it, I have a dough ready, waiting for me...
