This year is a new start to my new baking passion. Beginning January, I attended a Professional Baking course at Creative Culinaire. Although there were 16 of us, but we get to learn lots and heaps from Chef Judy and from one another through our own experience.
At the beginning of the course, Chef Judy said that as the course is a 12-days programme, we either become good friends after that, or become enemies (if we cannot stand one another!) I'm glad we all "graduated" from the course as good friends...or at least no hard feelings! :)
Since then, I've been baking almost everyday. As it was close to CNY by then, I've been baking Almond Cookies and selling them to my colleagues. It was selling like hotcakes. I've also baked some Green Tea cookies to sell.
I'm still practising and exploring new foods.

First of all congratulations on your professional bakery course and best wishes for starting your bakery soon.
Would be thankful if you could enlighten me about the courses at Creative Culinaire.
I'm not from Singapore but also passionate to learn about baking and start a bakery in the future.
I'm hoping to make a trip to Singapore and take the same baking professional course as you.
Could you give me some feedback about the course, their relevancy, 100% hands-on practice, is it worth the money investment? Have you also attended other courses at the school?
Trying to gather some information before saving money to make the trip.

Creative Culinaire conducts the class with 100% hands-on. As there are many things to be learnt, we are divided into groups to accomplish them. Chef Judy is very generous on her recipes. We usually work in groups. For example, when we need to bake a cake, my partner & I will share to take the ingredients. Then we took turns to have a hand in the baking. Sometimes, she did the preparation of other stuff while I bake and vice versa. We also share the cleaning & washing. We might also work in groups of 4. It all depends on how much we need to accomplish for the day. Almost everyday, we bring home at least one item of what we baked in school.
I enjoyed the class very much. It is really worth the investment. But someone feedback that it was too intensive for them. I thought it was quite alright though.
I haven't attended any course from other school though. I also attended Chef Judy's basic cake baking, which I thought was really useful for me. Therefore, that prompted me to sign up for her professional course.
Creative Culinaire has the professional course coming up again (http://www.creativeculinaire.com/professional-baking-course.html). If you can try to make it for this course. She has listened to our feedback that 12 days are a bit too short, so she made it 14 days. There will be two sunday breaks in between, compared to us where we have completely no breaks. And she provided basic tool box, whereas, we have to buy ourselves. So it's really value for money!

If you ask me for my true opinion, I think this new course programme is better and really worth it.
Just one cent worth of advice. Learning is one thing, practicing and perfecting is another!
