Durian Puffs

About five years ago, dad started organising a family gathering for all his siblings and their children at his place. It is usually after the seventh month of the Lunar calendar. During the first party, I made durian puffs from the leftover durians that he had given me. Since that year, every year, I will make durian puffs for his party. My relatives, big and small, all loved the puffs. However, I wasn't consistent. Every year, I used different recipe for the choux pastry. 

Perhaps my relatives who only had it once a year at the party, were full of praises for the durian puffs. I supposed it was mainly due to the quantity of good durians I have in the puffs. However, my siblings, being more picky, preferred one of the year where the puffs were very light. So I deduced that the best choux pastry I ever made was from that recipe which used more egg whites. And this year, I decided to use that recipe that produces a light and thin pastry puff. I didn't have the chance to try the puffs as two trays were snapped up in minutes. In fact, many of my relatives remembered dad's party for my durian puffs. ^~^

Therefore, here is the best choux pastry for you - Rose Levy Berandaum's Cordon Rose Cream Puff Pastry.

Recipe for Durian Puffs
Makes approx. 110 mini puffs

Choux Pastry, adapted from Rose Levy Berandaum's "The Pie and Pastry Bible".

Ingredients:
236g Water
113g Unsalted Liv Butter
1 tsp Sugar
1/2 tsp Salt
142g Plain flour
(240g) 3 large Whole Eggs + 3 Large Egg whites (I used 60g eggs with shell and came out to be approximately 258g, and I used them all.)

Method:

1. In a medium saucepan, combine the water, butter, sugar and salt and bring to a full rolling boil.
2. Immediately remove the saucepan from the heat and add the flour all at once.
3. Stir with a wooden spoon until the mixture forms a ball, leaves the sides of the pan, and clings slightly to the spoon.
4. Return the pan to low heat and cook, stirring and mashing continuously, for about 3 mins to cook the flour.
5. Without scraping the pan, empty the mixture into a mixing bowl.
6. Turn on the k-beater, and add whole eggs one at a time, followed by egg whites, beating them to incorporate after each addition.
7. The mixture will be smooth and shiny, and should be too soft to hold peaks when lifted with a spoon. If it is to stiff, add a little extra water.
8. Prepare a tray with baking sheet or silicon mat.
9. Fill a pastry bag, fitted with Wilton 1M nozzle, with the mixture.
10. Pipe puffs about 1 inch in size, and 1/2 inch apart from each other onto the sheet.
11. Bake for 10mins at preheated fan oven of 220C. 
12. Then lower the temperature to 180C, and continue baking for another 15mins or until golden brown.

Durian Fillings
200g Whipping cream
800g Durian pulps

Method:

1. Whipped the whipping cream till soft peak.
2. Add in the durian pulps, and fold to incorporate.
3. Use a handheld blender and blend the mixture till smooth.

White Chocolate Decoration
60g White chocolates, chopped finely

Method:

1. Melt the chocolates. If too dry, add some cooking oil, and mix well, till smooth.
2. Set aside for later use.

To fill the puffs:

1. Slit the bottom of the puffs with a small sharp knife.
2. Fill a pastry bag fitted with Wilton #6 round tip with the durian filling, and put it through the slit hole.
3. Gently pipe in the fillings and move the tip out as you feel the fillings being filled in the pastry.
4. Fill a paper silicon cone piping bag with white chocolate. Cut the tip.
5. Decorate the durian puffs with white chocolate and serve. puffs_durian06 puffs_durian04

Durian Tarts

With the leftover puff pastries after making the Portuguese egg tarts, and the leftover durian fillings from the durian puffs I made for the bloggers POP, I decided to do a combination of both! I knew that if I did not use them up quickly, I'll probably keep them until they turned mouldy!

I must admit that the initial durian fillings baking in the oven really stink the kitchen! However, after a while, when the puff pastry started baking, the nice aroma filled the kitchen instead. Ummph...
The verdict? The durian filling tasted really good in the puff pastry crust! The durian fillings were still soft and moist. In fact, it's even better than the egg tarts!
My durian fillings were made for the durian puffs previously. Through my previous experience of making durian fillings, I realised that the most ideal ratio will be 5:1 durian to whipping cream. Measure the whipping cream before whipping. Having this ratio means you get to taste more of the durian pulps, at the same time, the whipped cream makes it creamy. Previously, I used to add honey to the fillings too. However, I found that keeping the real and original taste of the good durians were very important.
These were the durian puffs which I made for my dad's party two weeks ago. There were 160 mini puffs in all! They were "sold out" within minutes after I brought them out!

Durian Swiss Rolls

I completely agree with Jean! It's truly a month of durians, durians and more durians! I have been eating durians non-stop, at least twice a week since two weeks ago! Even the $2/pc tasted good, don't need to indulge too much on MSW (猫山王), even though I will still yearn to have some during its season!
After my failed attempt on the durian chiffon cake, I still have some durians pulps left over. I decided to make durian swiss rolls. It seems that, there are endless options of using durians nowadays, compared to previously, where only durian puffs, durian swiss rolls and durian crepes were available commercially! Nowadays, you can still bake durian cheesecake with it!

I made my durian swiss roll using Pook's soft sponge cake recipe. The sponge cake is really very soft, however, I found that it's a bit "rough" for swiss rolls. Perhaps, this recipe wasn't meant for swiss rolls, more suitable for trifles or other whole cakes! Somehow, I found that using whole eggs and separating eggs really made a lot of difference to the texture of the cakes, especially swiss rolls. I still prefer swiss rolls using the traditional chiffon method, followed by separating the egg yolks and egg whites method, and finally the whole eggs method. The whole eggs method is less cumbersome though.

I hope you can try out this sponge cake recipe for swiss rolls and see if you agree with me!
Recipe for Durian Swiss Rolls 

Soft Sponge Cake, extracted from Daily Delicious
Makes approximately 13" x 11" sheet pan

Ingredients:
4 nos  Eggs
85g Fine sugar
80g Cake flour, sift
A pinch of salt
40g Whipping cream (warm)
Method:


  1. Whisk the eggs until lighten, then add the sugar gradually and beat till thick and lighten (Thick ribbon stage).
  2. Sprinkle the sifted flour and salt over the egg batter and fold to combine.
  3. Take 1/4 cup of batter and mix with the warm whipping cream, fold to combine. Pour the batter back, and fold to combine.
  4. The batter will be smooth and thick.
  5. Pour into a lined sheet pan, and bake it at preheated oven of 180C for about 12mins.
  6. Let it cool completely before frosting.
Fillings:
200g Fresh durian pulps
200g Whipping cream
20g Caster sugar

Assembly:
  1. Beat whipping cream with caster sugar till thick (soft peak).
  2. Place the cooled cake on a silicon paper. (I merely used back the lined sheet which was used to bake the cake).
  3. Spread the durian pulps on the cake evenly and thorougly.
  4. Then spread the whipping cream on the cake evenly.
  5. Roll it up tightly.
  6. Let it chill in the fridge before slicing. (I omitted this part and found they were very messy!)
  7. Consume within 2-3 days as fresh durian pulps are perishable, unless it is frozen.

Durian Chiffon Cake with a T...

What do you think of the outlook of the durian chiffon that I made? Looked pretty on the outside right? Right! When I overturned it to cool, it stayed nicely and neatly on the tube pan too! Never did I expect it to have flaws! I tried this recipe some years back, and it failed. I wanted to give it a try again, thinking that it was perhaps I didn't do it well. I've been successful in chiffons, and I don't think it was due to my skills! *grin*
Anyway, back to this recipe from Kevin Chai's book, I suspected the recipe might not be that good. The last time, it was too watery, so this time, I added slightly less milk to the batter. Still the chiffon didn't work.

Any veteran chiffon bakers that can help to advise on what caused the tunnel in the chiffon? Partly also because the pan I used was slightly too small for it to expand. Even so, I believe that was not the reason for the big deep tunnel to form...

All Kinds of Bakes

This week, I baked quite a lot of stuffs. However, I didn't get the chance to post them up mainly because I was really busy, a bit of lazy too! As my dad has a function on Sunday, he requested me to make the durian puffs again for his function. I made that last year and it was really very well received! As I have quite a lot of time on hand, I've decided to prepare more food for the function.


Besides durian puffs, I also made Chocolate Rice Krispies and Mini Apple Cinnamon Muffins. The Chocolate Rice Krispies wasn't very nice though as the rice krispies were a bit chewy. Fortunately the chocolate that was with it tasted good. So, there were no complaints.



I've tried this muffin recipe previously and I used it again for Apple Cinnamon. I remembered how I had my first apple cinnamon muffin from Muffin Break when I was in Melbourne more than a decade ago. To me, it was the most wonderful muffin I've ever had and from then on, it had become my favourite!

Lately, I've also been into muesli bars. Ever since my colleague gave me a muesli bar some weeks back, I've been waiting for these to be on sales at major supermarkets. Lately, I bought some Alpen and Carmen bars when they were on sales. I also recalled that granolas given by my sister some weeks back were very similar to museli bars. Therefore, I decided to make my own muesli bars! They can really be quite expensive, so I thought if I made them myself, then it should cost slightly less. Well, at least I can control what I want for the muesli. Boy, I was really glad I tried making it, it was really nice!





Recipe for Multi-grains & Fruits Muesli Bars.
Makes approximately 21 slices.

Ingredients:
150g Multi-grains
114g Raisins and Dried tomatoes, mixed*
100g Rolled oats
80g Rye flakes*
50g Dessciated coconut*
50g Sliced almonds, toasted*
20g Rice krispies, toasted*
88g Walnuts, chopped, toasted*
50g Duo Chocolate Chips
3 tbsp Honey
15tbsp Light Corn Syrup, approximately

Method:
1. Mix all the dry ingredients well.
2. Add in honey and light corn syrup, and mix well, like lumps.
3. Pack them and arrange them on a tray, approx 14” x 8”, lined with baking paper.
4. Bake at 180C for about 15mins or until it turns brown.
5. Cooled, and sliced them according to preference.

*Note: Ingredients are up to you to add. Just make sure there are a good mix of nuts and dried fruits to have a balance in taste!

Time Flies!

Time just flies with a blink of the eyes. I realised that I've not been updating my blog for about 10days! It was quite unlike me to keep the interval so long. I think it's either age is catching up with me (can't multi-task anymore) or I've been too busy lately. I guess another factor was also that I've not been baking much lately because of other commitments.

Anyway, I've just managed to finish another batch of durian-related food - durian muffins. The recipe was again, from Anna, which I had tried before previously. After a successful attempt, I'm tempted to try again of course! Who isn't motivated by successes? ;) I have all those leftover durians in the freezer, and I thought I'd better use them quickly before I forget again! And again, the texture turned out really nice. It was very fragrant too.



However, there was a sad thing. I spoilt my oven! I don't think I will be able to bake until I've gotten it repaired/replaced!! I've been very rough in handling my oven, and I think it was her way of showing displeasure, so she has decided to quit on me! *boohoohoo* Until it's been repaired, till then baking!

Just to share on my bakes for the past week.
Made some fondant cookies as a gift for a friend's daughter birthday.


It was scrambled eggs and garlic toast for breakfast last Saturday.


Try out a new Brownie recipe using Valrhona chocolates. Wasn't quite successful but I managed to salvage it! :p Will have to try this recipe again.



Did a durian cream cake for my sister-in-law last weekend.


Finally, had baked spagetti for dinner yesterday. I love the mozzarella cheese on pasta/spagetti.


I have also been very busy lately with my course. Had to practice my sugar paste flowers. I've still not decided on the design and the colour of my dummy wedding cake. Had been sourcing for the syrofoams and some other materials lately. It had been so stressful for me.


Durian Oreo Cake


Some days back, I saw HHB posted her blog with this Durian Oreo Cake. I thought it was rather interesting. Actually I've seen this combination of cake before, but I didn't think much of it until she baked it. I've requested her for the recipe and she was generous and kind enough to post it up after receiving so many requests. Well, since I've requested for it, I'd better not waste her effort.

So, picking up my courage, I tried to bake this cake. I knew I wanted to bake a durian cake, but was hesitant about adding oreo. Eventually, I did add the oreos. My failed attempt was baking the cake. Somehow, I still cannot fold in the flour without deflating the bubbles. In fact, I had to bake twice in a row, just so to get 3 layers of sponge. *sigh* Still trying to get the techniques of folding flour into aerated eggs right! Anyone there can coach me one-to-one please?? The batter just went flat and there was no difference in the level of the pan before and after baking! Hahaha... I saw how high the cake can rise in HHB's picture. Mine just refused!


Anyway, the comments I received on the cake is - sponge is too dense (as expected), should have more durian pulps, otherwise, the overall taste is good. I used diary whipped cream instead of non-diary as I prefer the diary taste more. It's actually a very easy and simple recipe to do, except for the challenge of the sponge cake for me! I like this cake too!


Some updates on my Wedding Cake Decoration course. Last week, we did some extension works and bridging. It was rather difficult to pipe as the royal icing was hard, and extensions required at least 7 layers!! Most of us agreed that we will skip this for our project work! Heehee... We also tried our hands on sugar paste frills and flounce and started some carnation modelling. We'll be doing more flowers next week. Yippee!


Durian Week

Last weekend, dad gave me a tub of durians. He said the durian "grade" not that good and he didn't want to waste calories on it, so he passed them to me. I took it happily and told him I'll turn them into durian puffs for him.

However, when it came to wanting to use the durians, I didn't feel like baking choux pastry. Instead, I baked a Durian Butter Cake from Alex Goh's book. The recipe can also be found in Yochana's blog. After baking, the durian smell just lingered everywhere. My eldest son couldn't resist it, and kept asking to try. After he finally convinced me that he should try, I pinched a tiny piece for him and he said it was very nice. He requested for more, I pinched another piece. He didn't get to eat more of it until supper time.



After dinner, I tried to bake another cake - Durian Chiffon Cake by Kevin Chai. The recipe again, can be found in Yochana's blog, though I referred directly from Kevin's book. I didn't think anything was wrong with my batter until I see some cracks on my chiffon. I had replaced coconut milk with fresh milk, and I don't think it was due to this problem.


Anyway, after baking, I took out the cake and hung it upside on a bottle. Then my youngest boy came into the kitchen, saw it and commented,"sure drop!" I hushed him and tell him it won't. He repeated it! *Arrrggghh* He has never commented before, but this time he made that comment.

One hour later, my daughter ran into the room and exclaimed,"mummy, your cake dropped!" *Arrrggghh* What happened! When I went to the kitchen, the cake really dropped from the pan. Hahaha...It was a pitiful sight of the cake. I regretted not taking any picture of the "crime" scene. However, I attempted to draw it out to share with you how it looked. Below was the scene.


Anyway, dispite having a distorted cake, the taste was really nice. The chiffon was really soft even though it cracked and didn't rise too high. The holes were very very tiny. It's either the batter was too watery, or the egg whites were not beaten enough. I don't think I have any spare durians to try, therefore, I'll just let this recipe RIP for now.

One Choux, Three Tastes

I was entrusted with two packets of durians last weekend to produce durian puffs this week for my sisters. I made my choux since Thursday and added the durian fillings last evening. Initially, I wanted to topped it up with white chocolates, however, I realised I didn't have white chocolates at home! :p I had milk chocolates and all kinds of dark chocolates, but not white chocolates. Hmm...wonder why I don't have white chocolates.

Anyway, I piped my choux pastries into small tiny mini puffs. So there was more than enough to go around. I made some with chocolate whipped cream fillings for my colleague's daughter, who did well in her PSLE! I did the rest with durian fillings. Unfortunately, there wasn't enough. So I used pastry cream and made the rest into chocolate cream puffs. I like the puffs as they are very light and fluffy. The inside was almost "empty", therefore, I don't even have to remove the pastries inside!



I also did cinnamon rolls this morning. I've always love cinnamon rolls. Too bad most of those cinnamon rolls have closed down. I miss eating those! The recipe for my cinnamon rolls was extracted from Yochana's Walnut Cinnamon Rolls.
