Artisan Breads Workshop

My dear friend, Doris, manged to persuade and convince me to take up an Artisan Breads Workshop at Bakerz@Work. It was just the right timing since I was looking for good workshop to attend. There are four lessons spread across four weekends. I knew the hours were long, but wasn't prepared for it to stretch that long during the first lesson. Subsequent lessons, I was prepared.

After three lessons, we had to come out with our own recipes to produce them on our fourth lesson. Almost like a mini project for us. We were expected to come out with three recipes- using pre-fermentation, liquid sourdough and stiff sourdough. On the second lesson, we were given assignment - grow our own sourdoughs. We were to grow them for our final lesson project. Fortunately, all our sourdoughs turned out well. AB0412 AB0413
My course mates are very creative. They came out with savouries like curry devil, chicken curry, red yeast chicken, chicken bak kwa potato dill amongst others! We had a great time tasting the breads, woo-ing and wow-ing at the shapes chef taught! My creations were Blackforest, Roasted Spiced Pumpkin and Hawaiian Artisan Breads. My course mates like my Hawaiian breads.
Thanks to our chef trainer for his many ideas and suggestions! All of us enjoyed ourselves and had a wonderful time during this workshop. We even did some debate with chef! It was during these period that new friendships were forged. Thank you friends, for making my artisan bread learning journey such a memorable one! After this workshop, I take a different look at sourdoughs. I get to understand and love them now!

“Ladies’ Nite” 女人聚乐部 Cooking Workshop

For a couple of nights last week, I caught a glimpse of the advertisement on Channel U regarding about a Cooking Workshop for the talk-show “Ladies Nite”. I managed to send in my email just before the closing date. Immediately after I sent in, then I realised it’ll be held on 7 May, Polling Day! I wasn’t concerned about the Polling Day, but more like taking that Saturday to do revision with my children for their coming exams. Nevertheless, I thought to myself, I might not be selected anyway. So I stopped worrying, even though I was secretly hoping to be selected!
One day after the closing date, I received an email informing me that I’ve been selected to cover the Cooking Workshop! I was also allowed to bring three friends along! I was both elated and worried. I was worried if my spouse will let me go since this weekend is critical for revision. However, my worries were unfounded. In fact, I managed to persuade him to go with me too! I gave the excuse that it'll be a great Mother's Day present for me too!

One of the catch to attend the workshop for me is also the host, Michelle Chong. My children love to see her in “The Noose”. They are a great fan of her, and so are we! For me, it’s both the cooking workshop and meeting the hosts that I’m looking forward to!

On the day itself, we drove to the Polling Centre to cast our votes before going to pick up my niece. I have invited my niece and my sister to tag along. When we reached Cookyn, Inc., it was still early, but all the tables, except one, were already filled with participants. Gradually, more participants streamed in. The owner, Mervyn, was busy with some preparations.

After 2pm, Vivian and Michelle appeared.  Both of them looked as good as in the show! In fact, they looked more natural and gorgeous in real person! They were very spontaneous. They started chatting with the participants, and asking us about our views of “Ladies’ Nite”. We started warming up. After a few more chats, they started the demonstration proper.
Michelle started her preparation for the “Steam-baked Fish Roll”. It included frying onions and mushrooms. Then wrap dory fish with ham and cabbage, and placed it on a baking tray.  After that, she added some seasoning and water, and placed them in the oven to bake. There were several parts to her demonstration. After each part, we proceeded to do it on our own. When our fish were baking, Vivian started her demonstration.
Michelle was wearing a mask because she wasn't feeling well that day.
Gorgeous Michelle with her food.
Vivian’s food recommendation was “Cold Rice Salad with Prawns”. Using overnight rice, it was mixed with french beans, tomatoes, corn and prawns. It was seasoned with olive oil, pepper, salt and orange juice! After mixing, it’s best kept in the chiller before consumption.
Pretty Vivian with her food.
After we finished with the preparation for salad, we continued with the final garnishing of the fish roll. Thereafter, we were left on our own to do our final decoration and presentation.
Finally, Michelle and Vivian went around the four tables to judge for the best food presentation.
The winning team had been awarded with a tee designed by Fann Wong. It went to a group of youngsters.
After the prize presentation and photo-taking, we were invited to a simple hi-tea. It was time to eat and enjoy! There were baked macaroni with cheese and sesame waffle cones with caramelised apples. These were in addition to the fish rolls and salad that we made. Among them, I like the fish rolls most. It was really healthy, and simple to make.
It didn't just end here. After filling our tummy, the casts went table to table to get feedback and comments on the workshop and the show. They interviewed everyone of us, followed by photo-taking. I understood that this workshop will not be telecast on the television.
The workshop ended with a "Questions and Answers" session where more goodies were given out. I was lucky to be able to answer a question and got myself a Channel U goodie bag!
I left the workshop feeling filled, happy and star-studded! It was a pleasure interacting with Michelle, Vivian, and the team from Channel U. Thank you Channel U, for giving me this opportunity to cook with the hosts, and my family members. I’ll be tuning in to “Ladies’ Nite” every Tuesday from 8-9.30pm, to learn more tips on trends, wellness and cooking!

Pastries Workshop

Past few days have been really hectic for me. There were so many things to be done during this school holidays. I just have to spend some time with the children besides my own activities.

Anyway, after a hectic weekend, going for a workshop on a Monday evening isn't my idea of resting. It so happened that all these activities were packed back to back. Fortunately for me, Doris agreed to attend this workshop with me. And surprisingly, we saw another of our baking kakee. It was a pastry workshop conducted at Chef Cooking Studio. What I was interested to learn, was the Royaltine Cake. This workshop was conducted by Chef Celeste. Chef Celeste is very experienced and has a good sense of humour. She is also very direct and shares some tips with us, like how to keep a tetra pak of whipping cream in the fridge. A very nice lady and forthcoming.
Three hours didn't seemed enough for us to complete three items. Each of us had our fair share of the items that she demonstrated and baked.

Chocolate Mayo Cake with Vanilla Bavarian Mousse. She used vanilla beans. She explained that this is best eaten with it removed from the cup and topped with berries or fruit compote. The chocolate mayo cake was really special, very chocky and rich.
Chocolate Mousse. This chocolate mousse was really nice. Most of us know that eggs used in chocolate mousse is uncooked. However for hers, she used cooked sugar syrup to whip her eggs. It was really light and delectable. The best part was, she topped our chocolate mousse with her homemade Burnt Butter ice-cream! It was really a great combination!
Chocolate Le Royaltine Cake. There were more steps involved for this cake. We learnt to make the feulletine base, the cake sponge, the mousse filling and the ganache. She was rather fast in her explanation, however, she did not hesitate to repeat them until we fully understood. This is my favourite amongst them.
As what she kept emphasing, the recipes that were given to us are just a guide for us. There are many possible ways to tweak them and turn them into different combinations. We just have to explore and experiment them ourselves. I totally agree with her!

Fondant Miniature Figurines Workshop

I've long waited to attend this workshop conducted by Gina. I've postponed it once, and finally I got my chance to attend it on Saturday.

I arrived her place much earlier before the workshop started. As I had known her for quite sometime already, we chatted before the workshop started. I've not been to her place before too!

When the rest of the participants arrived, we started with some basic do's and don'ts for fondants. She went through some basics before we started the modelling.

These were the miniature figurines which Gina did.

These were some of those that I did.

We found that time just flew too fast! Even with extension of the time, we weren't able to complete moulding all the figurines! However, we're happy that we have picked up some modelling skills from Gina. She shared her experience openly with us. I was glad I attended this workshop to sharpen my fondant modelling know-hows! :)
