Olive Oil Spiced Mixed Nuts

I found that nowadays, a lot of people are really getting very conscious on what they put into their mouth. Some people choose to exercise more regularly, others choose to select their food intake more carefully. Whatever it is, it's best to include both exercise and healthy diet in our daily life.

Having said that, I thought the best gifts to my new friends will be mixed nuts. However, instead of just normal mixed nuts, I added some olive oil and spices. Here's sharing the recipe of how I made them. I'm so glad my new friends loved the mixed nuts!
Recipe for Olive Oil Spiced Mixed Nuts

Ingredients
A
125g Olive Oil
2g Dried rosemary herbs

B
500g Whole skin-on Almonds
500g Whole Walnuts
300g Cashew nuts
200g Chickpeas
250g Pumpkin seeds
250g Sunflower seeds

C
2 tsp Ground Pepper
2 tsp Ground Cinnamon
1/2 tsp Five spice powder
1/2 tsp Ground Nutmeg
1 tsp Fine Rock Salt

Method:
1. Heat up ingredients A. Then leave aside to let the rosemary infused until cool. Strain out the rosemary and discard.
2. Mix ingredients C together.
3. For each group of the nuts, mix in 2-3 tablespoons of olive oil, followed by 1 teaspoon of the mixed spices. For example, mix 500g Walnuts with 3 tbsp olive oil and 1 tsp mixed spices. Stir well.
4. Spread them on a tray, and let them bake at 130C for 10-15mins. Switching them around half time.
5. Continue for the rest of the groups, almonds, cashew nuts etc. The smaller nuts may take lesser time to bake.
6. Let them cool individually before mixing them.

Note:
~ I baked the nuts separately as the differences in sizes of the nuts will have different baking time.
~ The quantity I made is huge. You can cut down on the quantity of the nuts, or change the nut variations to suit your taste.
~ The mixed nuts is ideal as a gift for any occasion.
~ The spices can be varied in accordance to your preference. The last time I added some chilli powder. As I don't have any more chilli powder, I didn't add. I would like to add it if I have.
~ I used rock salt which is healthier than the normal table salt. The rock salt I used is Himalayan rock salt.

It's actually quite nice. Snacking on nuts is better than snacking on crackers. Heehee... Maybe you can cut down by half the variety so that it's not so expensive?

Like I told you, both me and my nuts-loving dad love the mix. When he saw those garbanzos, he was like: "Wah, your friend even included kacang putih! I like wor ..." Hahaha! Not too salty! Perfect!
