Using the same method as I made my vanilla extracts, I made a small bottle of lemon extract.
Recipe for Lemon Extract
Ingredients:
3 Lemons
90g (Absolut) Vodka
Method:
- Prepare a clean small bottle with cork stopper.
- Zest the lemons well.
- Put the zest into the clean bottle.
- Pour the vodka into the bottle. Make sure that all the zest are submerged in vodka.
- Store for at least 2 weeks before using.
So are you convinced of making your own extract now?

Thank you! Just made another 1/2 gallon batch vanilla and ready to move to something new. Lemon extract!! Just one thing... you shoudn't store vanilla beans in the freezer or fridge... only in the pantry well wrapped or in a tightly sealed glass jar... not trying to be nosy though. ;-) Were you happy with the strength of your lemon extract?

You're right, the lemon extract was not intense enough. Any idea to intensify it? I will try adding more lemon zest to it! :p Thanks for your info tho!
I received some Tahitian beans, when I ordered my Madagascar beans. They said they had a fruity/floral scent and taste. I wasn't sure I would like it so I made just a small bottle. If you haven't tried the Tahitian beans, I strongly recommend it. It is fantastic and smells so good. I've also made lemon and orange. I just did it for fun and to give away. Now, like you I am hooked on it. I enjoy making stuff and people think I'm a genius. Ha. You know how simple it is, but I just take the compliments. I enjoy your blog! One tip I have for making your own vanilla...dont use a plastic container. Glass gives much better results. I think the oil in the beans get all gunked up in the plastic.

Yes, I made all my extracts in glass bottles, and I specific buy them for my extracts. Thanks for your info. I agree with you that the oil in the beans will get gunked up in plastics. Not worth to put them in plastics as they're so precious to us! ;) Happy "extracting"!
