I bought two large chickens at a local supermarket yesterday. Had it washed, and marinated. For one chicken, I marinated with rustic tuscan herbs which my ex-colleague gave me previously, while the other, I marinated it with fresh rosemary herbs my hubby bought for me from JB two days ago. The marinate included some oyster sauce, dash of peppers and olive oil.
So for lunch, I roasted the rustic tuscan herbs chicken and baby potatoes (skin on) with fresh rosemary herbs and olive oil. My children loved the roasted chicken and baby potatoes very much. It has been quite a while since they last eaten a roast chicken. The chicken meat was very tender and it tasted fantastic with the herbs! The baby potatoes were crispy on the outside and soft on the inside and it was sweet!

Jane, maybe cuz it's Sunday, I've made a roast chicken for myself and Aaron too for lunch! It was yummy but we only roasted chicken marylands because we both dislike the breast part. I also tend to always over-roast it so the breast part ended up dry instead of moist and juicy. I find it easier to roast thighs and drumsticks since they have higher fat content. Yours look awesome! Did you make a gravy to go with it?

I just saw your roasts too! Yours is so beautiful with all the vegetables and Yorkshire puddings! Mine is just ordinary compared to yours! Haha... Nope, I didn't make any gravy, just the roast itself. Five of us finished one 1.4kg chicken. :p

All roasted well Jane, I never roast a whole chicken before, always the drumsticks or the wings. I'll try one whole chicken next time I cook.:) Do you think the temperature and time the same as roasting a drumstick? (i worry that later my chicken will be dry and hard)

I like to roast the whole chicken. I found that it's easier nicer after roasting. I use my normal baking mode, ie. convection for this roasting instead of grilling. Because when I used the convection, it has the fan and makes my chicken more even. I use 220C for 1½ hours. I marinated the chicken for 24hrs and put it in the fridge. The roasted chicken has very crispy skin, very soft and tender meat, including the breast part. My family like it. How long do you roast your drumsticks and what temperature? I hope you like it!
