Three Mother's Day Cakes in a weekend!

Out of the three cakes that we had, I made two of them. My hubby came home on Friday with a cake he bought from Bengawan Solo for Mother's Day. I was too quick to add that there wasn't enough space in the fridge as I'll be making two cakes-one for my mum, and the other for my mother-in-law. Suddenly, I realised how ungrateful I was! He was kind enough to buy a mother's day cake for me and there I was complaining about the fridge space! After I realised what I have done, I quickly asked what cake did he get for me. He said it was a chocolate cake. The children were more excited than me. Before we could take a picture of the cake, each of them have already eaten the chocolate decorations! It was a chocolate cake decorated with chocolate pearls. Very nice indeed!
Now back to my cakes. I had wanted to make the Passionfruit and Mango Mousse Cake since I learnt it from a workshop some time back. I followed the recipe carefully and I thought it was really close to the cake I tried last time! This was made for my mum and my family. I thought the cake was pretty well done, except for the mango centrepiece. I couldn't handle the mango well, so the centrepiece was quite horrible!
The sweetness of the chocolate meringue sticks complement the sourness of the passionfruit really well! The coconut dacquoise goes really well with the passionfruit and mango mousse. I sandwiched the mousse with mango. My family liked it very much.
As for my mother-in-law, I made a coffee cake from Nasi Lemak Lover on Saturday, and had it frosted on Sunday morning. I had to bake it earlier as I had to attend a workshop on Sunday. I thought she might like this cake. I was rather surprised when the cake turned out to be quite flat. From her blog, it looks rather high and big, I couldn't achieve the same. I almost wanted to redo the cake. After discussing with Grace, I decided to proceed with the frosting of the cake the following day.
Fortunately I heeded Grace's advice, the size of the cake and the frosting was just nice. I decided to decorate it with chocolate coffee beans, and silver dragees, which is more reflective of Mother's Day. I distributed the cakes to my mother-in-law and sister-in-law, so I had no chance to taste it. However, my niece did comment that the cake was soft and the buttercream is really nice. Therefore, this recipe will be a keeper for me! ;)

Where's my "feet"?

After having successfully attempted the macarons, I wanted to add flavour to my macarons. So I used the same recipe and added 25g of cocoa powder to it. I was actually contemplating between this recipe that I've used before, or Yochana's recipe. I finally fell back to this recipe that I've "tested & proven" myself.
Unfortunately, I wasn't so lucky this time! I've over beaten the egg whites and the resultant was macarons-without-feet! These are the "handicap" chocolate macarons that I made. It actually tasted very good (minus the hollow chewy part, though it's also chewy). I put added orange, coffee and chocolate cream to them, and they are as good as "non-handicapped" ones! No feet, nevermind, still eat! Hahaha...

I also did a 6" Mango & Passionfruit Chocolate Tart.

[Post Mortem (27 Oct 08): Cross section of the tart.]
My family said the tart was nice and chocky. It was because I mixed dark couverture chocolates to it. ;)

Another...Failed Attempt

It's another failed attempt - Mango Chiffon! I wanted to give it a try again today since I haven't baked a cake for a couple of days. Who knows this time, it's not "KPE" anymore, it's the "Great Depression"! Take a look at my "depression" which tasted like "kueh". I think next time, I don't have to find any recipe for kuehs, it just comes naturally with this Mango-Chifon-turned-kueh-cake! :p

Another Cake

I baked another smaller cake for my hubby on Monday, while he was on course. This was to be shared with my parents-in-law on Wednesday when they come over. I used HHB's cake sponge. However, I thought it didn't turn out well because there were lumps of hardened unbaked flour at the bottom of the pan when I overturned it. I cut away the layer, then cut the cake into 2 layers.
To my surprise, it was quite pretty inside! :p I was pretty pleased. So I started frosting it. I used the Mousseline buttercream, and added quite a generous amount of mango puree to the buttercream. Added some passionfruit pulp, and called it, Mango & Passionfruit Cream Cake. Overall, the cake was really nice! The sponge was soft, the mango taste was prominent, and the passionfruit pulp was just right! This is called, discovery-by-luck!! :p

Mango Cake

I felt like baking a mango cake to give myself a good treat. So I spent the next 2-3 hours baking and decorating my mango cake. Give myself a pat on the back... Heehee...
Using the sponge cake mix, the cake rose very beautifully in the oven.
Sliced them up thinly in three pieces.
Add fresh cream and mangoes. First layer.
Second layer, another set of fresh cream and mangoes.
Cover up the cake with fresh creams all over. Foundation to a lady as to cream to a cake.
Give it some wave on the cream and topped it with mango.
The mango is so huge, covered up about 75% of the cake surface! Yummy!
Finally the cross section of my mango cake. Nine layers in total, high & delicious!
Cake recipe based on Alex Goh's sponge cake.
