Orange Bread

I am on medical leave today. Went to see a doctor and gave me some anti-biotics and medicine for my throat pain & voice. As usual, when I'm home, I will tend to want to do some baking. So I attempt to bake an Orange bread.

This bread took a long time to proof. I finally got it rose up quite a fair bit.

Fresh from the oven.

See the nice strands of the bread.

Nice golden and yellowish colour.

Separate them to see them close up.

Recipe extracted from Pure Enjoyment, Orange Bread.

[Afternote: The bread was hard and tough the following day, although the orange tangy taste was really nice. Guess I didn't proof enough during the proofing :(]

Happy Birthday to me!

Happy birthday to me! My sister bought me a Chocolate Indulgence from Secret Recipe on Saturday. This is huge & yummy!

Milk Loaf Today

My sister's friend left for Paris, Le Cordon Bleu last Friday. She left a lot of baking stuff for me! Gee, my cupboard is really full of baking stuff now. I'm not complaining though, she had a lot of good quality stuff! I shall bake more often before the expiry dates!
I did Milk loaf today. But I don't know if it turned out well, but the look of the milk loaf was really nice and good.

Milk loaf just out from the oven.

Slice them up. Quite pro right?

Softness of the milk bread.

Packed them all into the container.

[Afternote: It was soft the following day. Except the yeast taste was quite strong. Can reduce the yeast.]

Baking Weekend!

It is a baking weekend for me, starting from Friday since I didn't work as my children had no school for that day. As I had quite a number of eggs left from the week before, I tried Traditional Lapis Cake. The result was great!

Bake I: Traditional Lapis Cake
Quite a lot of preparation work for the batter.

Grilling the cake layer...

by layer by layers.

Testing the doneness of the cake by poking a pin into it.

My final Tradition Cake Lapis. Nice 10 layers.

Bake II: Wholemeal Bread
Steps to baking the bread.

Fresh from the oven wholemeal loaf.

Whole lot of wholesome wheat & oats.

Bake III: My Chocolate Delight!
I created this for my family on Saturday. Wanted to do chocolate truffles for them, but the chocolate ganache was too soft due to couverture chocolate. So I did this instead.

Brought the whole container to my mum's place.
What's in the chocolate delight?
1. Chocolate Ganache
->semi sweet choc, dark chocolate couverture, whipping cream, butter & Rum.
2. Chocolate Delight
-> cherry, grape, blueberry, chocolate ganache, almond nibs, pistachio nut, crushed digestive biscuits. Topped it up with chocolate ganache, then sprinkle with valrhona cocoa powder.
Verdict: Wholesome! Just right & enough!

Another Busy Maidless Week!

It's another busy week without my domestic helper. So I tried not to bake/make too complicated food. This time, I made green tea ice-cream and chocolate truffles.

I: Green Tea Ice-Cream

Mix the egg yolks, sugar & milk.

Added green tea paste.

Pour the green tea mixture into whipped cream & mix.

Mix them throughly.

Put it into the container and freeze.

Finally the creamy green tea ice-cream!

II: Chocolate Truffles
Made the chocolate truffles for my colleagues for their birthdays. Happens to be in the same month and the same horoscope as me!

5 different toppings.

Wrapped them up nicely with ribbons.

Crazy Busy Week!

This week is really crazy & busy! My domestic helper went back for her home leave for two weeks. So I'm now a Part-Time maid! But somehow, I cannot stay away from baking. Just had to find time to do some baking or some other stuff. So here it is.

New Venture I: Coconut Ice Cream.
I wanted to make mango ice cream, but I spilled my mango puree!!:'( So I ended up with Coconut Ice Cream.

Creamy mix before freezing.

Smooth as silk. Looks really like ice-cream.

Texture is really ice-cream! Yummy. Rich & thick.

Recipe extracted from Yochana's Cake Delight, Coconut Gelato.

Repeat Venture II: Breads

Same old breads.

New Venture III: 100% Almond Cupcakes (Gluten free)

I topped it with almonds nibs instead of frosting as in the original recipe.
