Homemade Lemon Extract

I'm hooked. Hooked on making my own extracts! Since I first made my Madagascar Vanilla Extract, I've been making them on and off, trying to use up my vanilla beans! I have enough Vanilla Extract to last me a lifetime!! I still have some vanilla beans in my freezer, keeping them well and secretly.

Using the same method as I made my vanilla extracts, I made a small bottle of lemon extract.
Recipe for Lemon Extract

Ingredients:
3 Lemons
90g (Absolut) Vodka
Method:

  1. Prepare a clean small bottle with cork stopper.
  2. Zest the lemons well.
  3. Put the zest into the clean bottle.
  4. Pour the vodka into the bottle. Make sure that all the zest are submerged in vodka.
  5. Store for at least 2 weeks before using.
You may refer to another recipe here.

So are you convinced of making your own extract now?

  2. Oh, what a waste! Why did you throw away your vodka? I thought alcohol can keep for years?

  3. Jane, where did you get your small glass bottles? I've been hunting for them for awhile now. Thanks!

  4. HBS, aren't they useful? Unfortunately, I'm like you, hunting all over Singapore but can't get them. I bought them when I was in Hong Kong last year...

  13. Thank you! Just made another 1/2 gallon batch vanilla and ready to move to something new. Lemon extract!! Just one thing... you shoudn't store vanilla beans in the freezer or fridge... only in the pantry well wrapped or in a tightly sealed glass jar... not trying to be nosy though. ;-) Were you happy with the strength of your lemon extract?

  14. Hi Momevans4x,
Thanks for your information. I only realised that I shouldn't store in the freezer after I kept it there. :( Was told by someone to store in freezer.
You're right, the lemon extract was not intense enough. Any idea to intensify it? I will try adding more lemon zest to it! :p Thanks for your info tho!

  15. I received some Tahitian beans, when I ordered my Madagascar beans. They said they had a fruity/floral scent and taste. I wasn't sure I would like it so I made just a small bottle. If you haven't tried the Tahitian beans, I strongly recommend it. It is fantastic and smells so good. I've also made lemon and orange. I just did it for fun and to give away. Now, like you I am hooked on it. I enjoy making stuff and people think I'm a genius. Ha. You know how simple it is, but I just take the compliments. I enjoy your blog! One tip I have for making your own vanilla...dont use a plastic container. Glass gives much better results. I think the oil in the beans get all gunked up in the plastic.

  16. Hi CarolAnn, thanks for your recommendation. I'll look for opportunity to get the Tahitian beans. I've always thought Madagascar beans will be the best and sought after.
Yes, I made all my extracts in glass bottles, and I specific buy them for my extracts. Thanks for your info. I agree with you that the oil in the beans will get gunked up in plastics. Not worth to put them in plastics as they're so precious to us! ;) Happy "extracting"!
