Lesson 3

Lesson 3 was on Chocolate Piping. Just realised that to use chocolate to pipe, I can't mix with cream, which means, I can't use Ganache! Use chocolate on its own is easier to remove and use as chocolate decor on cakes or petite fours. These were some of the chocolate designs we learn in class.


Our instructor was really nice. She asked if we were hungry & a few of us said yes. She popped by next kitchen and brought us a "German Butter Cake" which I didn't manage to catch the name. Should be those "K-dunno-what" name. Anyone knows what this is? She said some named it as bread, while others named it as cake. But it's really a nice butter cake with chocolate chips, almond flakes and walnuts! Yummy!

Hi Aimei,
I attended the cake decoration course from BITC. I've not attended others, so I'm not sure if any others is good. Actually I found the cake decor course from BITC not very structure, but at least I get to learn decoration from buttercream, chocolates and whipping cream. That was my objective and at least it has met my objective. It is also not expensive as I paid for about $700++ for 56hours of lessons. It was after working hours, so the schedule fitted me just nice. You can go to www.bitc.com.sg to find out more information. They are starting another class next week.
